Our cacao products come from the coastal mountains off the Caribbean beaches of Venezuela. For centuries, Venezuelan cacao has been sought after for its delicate aromas and superior taste. This is due to the fact that Venezuela has the highest consistency of Criollo and Trinatario bean varieties in the world. These varieties combined with the country's rich soil, diverse climate and centuries of cacao cultivation makes Venezuela the 'King of Cacao.'

 

At Eastbluff Trading we work exclusively with the top single origin criollo and trinitario bean varieties. We love what we do! We are passionate about our beans and if you are interested in learning about the journey of the cacao bean please read on:

 

Cacao Bean

 

The cacao pod is harvested usually between the months of December and May and it's beans are collected into small wooden boxes and fermented to draw out the beans' inherent flavour profile. After that, they are sun dried to a moisture content of 6% - 7%.

 

Cacao Nibs

 

The beans are then taken to our USDA Organic Certified processor where they are lightly roasted to further enhance their chocolate flavor and develop the sublter floral and vanilla tones. After this, they are deshelled and broken up into smaller pieces called cacao nibs.

 

Cacao Liquor

 

The nibs are then ground to create a paste also called cacao liquor. This is 100% cacao. Chocolate is made by mixing this paste with sugar, cacao butter and other ingredients.

 

Cacao Powder


The liquor is then passed through an expeller press. Unlike other company's that use a hydraulic press, the expeller press keeps internal temperatures low so as not to destroy the beans' natuaral antioxidant agents and delicate flavours. This step seperates the oils from the cacao. Around 45% of the cacao liquor is oil. The remaining 55% is then milled into a fine cacao powder. containing around 10% - 12% fat.

 

Cacao Butter

 

The seperated oil is filtered to remove impurities. It is then packaged into cacao butter. For use in chocolate, cosmetic and other food items.

 

Cacao Husk

 

The husk accounts for approximately 12% of the beans' weight and is usually a byproduct. It can be used as Organic fertilizer, mulch and animal feed. Some recent studies are exploring its use as a cleaning agent for clean coal.
